Getting back on eating healthy again :) For almost a month I’ve been eating pretty bad and I’ve done nothing but go out to eat since I’ve been here. I recently moved to a new town and I’m having issues getting settled in with my roommates evicted roomie taking forever to get his stuff out of my room. Along with 8 hours of work 5-days in a row it’s kind of hard to get back into motion but I’m determined to lose that 5 lbs and continue to lose 30+ pounds. This weekend I’m going to join a gym just a few minutes down the street (Anytime Fitness) and make it a goal to go there after work and especially on my two days off!!

Tilapia ( whole wheat flour, garlic powder, paprika, & salt + pepper) sauteed in canola oil. Spring mix with lime dressing, verde salsa and Greek yogurt.


Summer Slow Cooker Lasagna With Zucchini and Eggplant

Have you ever made lasagna in your slow cooker? Up until the last few months, I was completely skeptical about the idea. I get a lot of use out of my slow cooker, especially on busy weekdays, but for pasta? I wasn’t so sure.

Now, I’m a convert. The slow cooker makes the process really simple: no boiling noodles, and no need to worry about making neat layers. It’s especially nice during the summer, since there’s no need to turn on the oven.

I moved to Boone and moved in with my co-worker/friend but we’re still waiting on the evicted roommate to move the rest of his crap. Oh how I wish I could just toss it over the balcony but no…I have to be civil. Haven’t had time to do real grocery shopping so I’ve been eating out which is not good because I feel so bloated. Been drinking more than usual, not to excess but more than my few a month. Working in the morning for about 8 hours kind of wears me out plus a nice walk up hill to my car I’m a little worn out but I’m determined to get a gym membership and do something after work or since the place is only 5 minutes down the road go later in the day. I really need to create some kind of routine, some normality because I’ve been letting of lot of stuff get to me that I shouldn’t and I just can’t have that getting me down :/
